'This is a magic moment:' Here's Jeff Gundlach's full presentation on markets and the economy in 2018

The stock market is likely to end its record streak of positive returns this year, according to Jeffrey Gundlach, the founder of DoubleLine Capital. 

During his "Just Markets" webcast with investors on Tuesday, Gundlach forecast that the S&P 500 would end 2018 without a positive total return. Last year was the market's ninth in a row, the longest on record.

But don't count Gundlach among those forecasting a US recession any time soon. No economic indicator that typically sends a recession signal is flashing one right now. "This is a magic moment," Gundlach said.

On the bond market, Gundlach said it was likely that the 10-year treasury yield would continue rising if it hit 2.63%. The benchmark bond's yield spiked by 7 basis points to a 10-month high after the Bank of Japan trimmed its bond purchases. 

Gundlach also weighed in on bitcoin, saying that the cryptocurrency had likely topped.

Living a vegan lifestyle requires much planning and hacks, especially for those who intend to make the switch cold-turkey. With the right mindset and support system, however, it's completely possible.

Here are five tips for making any recipe vegan.

Replace meat with tofu, tempeh, or mushrooms.

It can be hard to cut out meat, whether it's red meat, turkey, or chicken. Tofu, however, offers just as much protein and iron as most meat, making it an ideal replacement. Even though it's not everyone's favorite food, tofu can be prepared in many different ways, and it's available in a variety of  different flavors and textures. And thanks to tofu's consistency, it can also be used to make taco meat.

If you're not too keen on tofu, mushrooms are another great meat substitute. A good source of protein, vitamin C, and iron, mushrooms can be marinated and grilled to make the perfect burger. Portobello mushrooms can also be baked and stuffed for a quick and easy meal.

If the texture of tofu and mushrooms isn't for you, try tempeh. Made from whole soybeans and firmer than tofu, tempeh is rich in protein and fiber and can be purchased at your local grocery store.



Try a milk substitute.

There are plenty of substitutes to choose from when it comes to milk alternatives. Dairy-free options include soy milk, rice milk, oat milk, hemp milk, almond milk, or coconut milk.

Knowing which dairy-free option is your favorite can help when ordering out, too, especially at places like Starbucks and Dunkin' Donuts where milk is used to make most drink options.



Swap out cheese for nuts.

Although you can purchase vegan cheese at your local specialty supermarket, nuts can serve as the perfect substitute for any recipe that calls for cheese. Raw nuts, particularly cashews, can be pureed into a creamy sauce that can be substituted into many of your favorite dishes including fettuccine Alfredo, nachos, or even fondue.

If you're looking for a less creamy, more crumbly substitute, tofu can also be used to replicate ricotta or cottage cheese on dishes such as pasta and pizza.

It has 7,641 islands, but only around 2,000 are inhabited.

For decades, Filipinos thought their country was made up of 7,107 islands. But in 2013, the National Mapping and Resource Information Authority (NAMRIA), which is part of the Philippines' Department of Environment and Natural Resources, obtained new technology that allowed them to better assess land formations. As a result, NAMRIA discovered more than 500 previously unknown islands. 

After the discovery, controversy ensued. Some critics alleged that the newfound "islands" were in fact just large rocks, islets, reefs, or sandbars, and that they did not meet the legal definition for an island. 

Either way, most of the new islands won't be habitable. Currently, people live on just a quarter of the country's islands. 



Manila, the capital, is actually comprised of 16 cities.

When most people talk about Manila, they're actually referring to the greater metropolis area, otherwise known as Metro Manila. 

Just under 2 million people live in Manila proper, according to the country's 2015 census.

Metro Manila, on the other hand, is made up of 16 cities, including Manila proper, and boasts more than 12.8 million people. Metro Manila is also known as the National Capital Region, which is one of the 16 administrative regions. 



Spain, the US, and Japan all colonized the Philippines at one point.

Spain first settled in the Philippines in the 16th century. It would go on to colonize the country for more than 330 years, although the British briefly occupied Manila for 18 months from 1762 to 1764. 

In 1898, Spain was forced to sell the Philippines to the US following its defeat in the Spanish-American War. The US remained in power until Japan invaded during World War II. The Japanese were forced to leave after their defeat in 1945. 

Colonial remnants can still be felt today. From Spanish architecture to the widespread use of English, the Philippines is not unlike most other countries still reeling from centuries of colonial subjugation.

How Tua Tagovailoa went from Hawaiian star to backup quarterback to Alabama's national championship hero

On Monday, Tua Tagovailoa became an overnight star by helping Alabama win the college football championship, 26-23, over Georgia.

As a freshman at Alabama, Tagovailoa got into games occasionally this season, but he was summoned on the game's biggest stage and delivered, throwing three touchdowns to lead the Crimson Tide to victory.

Now, it appears the young quarterback, who was a sensation in Hawaii and five-star recruit growing up, is about to become the next big thing in college football.

Here's all about Tagovailoa and the path that led him to his breakout game.

Tua Tagovailoa checked into the second half of the college football championship game on Monday and led Alabama to a 26-23 win.



Tagovailoa threw the game-tying touchdown late in the fourth quarter, then tossed a gorgeous 41-yard touchdown in overtime to seal the deal.

 



Tagovailoa's heroic performance may have been destiny. According to a 2015 Sports Illustrated profile, growing up in Hawaii, Tagovailoa used to sleep with a football in his arms at a young age.

We've all heard urban legends and rumors about absurd laws in America, but you can't believe everything you read on the internet.

Sites like dumblaws.com — which rarely link to states' current statutes or may misinterpret them — only perpetuate the myths. Yes, it's illegal for a drunk person to enter a bar in Alaska. No, a woman's hair does not legally belong to her husband in Michigan. The list goes on.

We decided to undertake some legal legwork and identify the strangest statute still on the books in each state. You might find you're guilty of one or two violations.

ALASKA: A person cannot get drunk in a bar and remain on the premises. The statute says an intoxicated person may not "knowingly" enter or camp out where alcohol is sold.

In 2012, police in Anchorage, Alaska, started enforcing the law by sending plainclothes officers into to bars to identify excessively drunk people and arrest suspects, according to ABC News.

6 celebrities who denounced H&M after it used a black child to sell a 'racist' shirt

H&M has officially apologized after being the subject of major backlash for a hoodie that many are calling racist.

The shirt, modeled by a young black boy, read "coolest monkey in the jungle," immediately sparking widespread outrage for the juxtaposition of the model with the thought of being a monkey, a common racist trope.

INSIDER reached out to H&M for comment and they provided us with the following statement: "We completely understand and agree with [G-Eazy's] reaction to the image. We have got this wrong and we are deeply sorry. We strongly believe that racism and bias in any shape or form, deliberate or accidental, are simply unacceptable. We completely understand the criticism and we agree with it. We have taken down the image and we have removed the garment from sale. We are now investigating internally to avoid this happening again. We will continue the discussion with G-Eazy and his team separately."

The Weeknd

The Weeknd was one of the first big names to come out against H&M and make a strong declaration about working with the brand.

"Woke up this morning shocked and embarrassed by this photo," he tweeted. "I’m deeply offended and will not be working with @hm anymore …"

The Weeknd released a line of t-shirts, jackets, and other items in H&M stores in 2017.



G-Eazy

Rapper G-Eazy also took to social media to express his feelings and end his relationship with H&M.

"Over the past months I was genuinely excited about launching my upcoming line and collaboration with @HM," he wrote on both Twitter and Instagram. "Unfortunately, after seeing the disturbing image yesterday, my excitement over our global campaign quickly evaporated, and I've decided at this time our partnership needs to end. Whether an oblivious oversight or not, it's truly sad and disturbing that in 2018, something so racially and culturally insensitive could pass by the eyes of so many (stylist, photographer, creative and marketing teams) and be deemed acceptable. I can't allow for my name and brand to be associated with a company that could let this happen. I hope that this situation will serve as the wake up call that H&M and other companies need to get on track and become racially and culturally aware, as well as more diverse at every level."

The company responded, mentioning G-Eazy and The Weeknd by name in an email, according to ABC News, saying that "we completely understand and agree with the reactions by The Weeknd, G-Eazy, and others."

 



Jesse Williams

Jesse Williams starred alongside Minaj in the aforementioned holiday 2017 video advertisements. The actor, who has made his voice heard in regards to past moments of racial tension, released a passionate statement on Instagram, which included addressing H&M's lack of diversity in its leadership.

"Just getting back from vacation to see this pathetic excuse for corporate behavior and [ir]responsibility. Last year I chose to do a holiday campaign w/ @HM specifically because it centered women and girls as imaginative doers; because it centered an intelligent dark skinned girl w/ natural hair as protagonist; because it featured a loving, creative, working class black family. And then, here they come with this b-------," Williams wrote. "These offenses are more about the makeup of the rooms where they happen, than the items they produce. There is a concentration of power, committed to exclusion, whether casual, accidental or conscious.

"The collateral damage of this corporate, colonial mind-state occurs several times a year, and it's predictable the world over, like the seasons, so when i laid eyes on it, my initial reaction was neither shock nor anger. It was boredom. This old world, white power, failing-upward culture of reckless trampling that repeatedly exposes itself, is boring already. Aren't you bored?

"Aren't you bored watching mediocre, incurious & consequently destructive people waltz through your life, shepherded into positions of power, further choking off opportunity for the actually talented, curious & decent among us? It's a truly desperate and bizarre ritual we've become conditioned to. For participants, looking at a picture of a loved one reduced moderate pain by about 40% and eased severe pain by about 10 to 15% in comparison to seeing a snap of an acquaintance. Talk about the friend zone.

 



You feel kind of drunk.

No, it's not just those after-work margaritas and/or the pre-date tequila shots to calm your nerves. Love leaves you feeling a little bit buzzed, thanks to hormones.

According to CNN, when you're in love you may feel uninhibited, unafraid, and more boastful because of oxytocin. University of Birmingham researchers looked into existing research on the effects of both oxytocin and alcohol. They technically occur in two different parts of the brain, but they actually have similar outcomes.

Your oxytocin levels may have you acting a little differently, especially when you're around your crush. And they said act natural. Good luck!



You're unable to form words.

There's a reason you can't form words around your wannabe bae and it has nothing to do with their perfect hair or adorable smile.

Blame nor epinephrine. Though it's still being studied, according to Health, this powerful hormone increases your heart rate, getting you all sorts of hot and bothered (read: flustered and fumbled) when your crush so much as approaches.

I flew on Honda's new $4.9 million private jet, and it's an absolute game-changer

Honda is known for its engineering excellence. It's also a company willing to take its time to get things right. For example, Honda famously spent a decade perfecting its second-generation NSX supercar, Business Insider's 2016 Car of the Year.

Naturally, we weren't shocked to learn that the company spent 30 years getting its first private jet off the ground. In 1986, Honda's aviation team — led by a young aeronautical engineer named Michimasa Fujino — began work on the company's ambitious foray into the aerospace industry. It was one of the final major projects greenlit by Soichiro Honda, the aviation enthusiast who founded the company, before his death in 1991.

In 2006, the Honda Aircraft Corporation was formed, with Fujino as its CEO, to develop, build, and sell the $4.5 million HondaJet.

"The power of dreams is both the force and the philosophy that guide us at Honda," Fujino wrote on the company's website. "Now, Honda proudly brings you to the pinnacle of engineering performance — the HondaJet."

He called it "the world's most advanced light business jet."

Dubai is getting these stunning $23 million floating villas that can withstand flooding

Like a number of coastal areas around the world, the United Arab Emirates is becoming increasingly vulnerable to sea level rise.

According to a 2017 study from the Emirates Wildlife Society and World Wildlife Fund, researchers expect ocean levels to rise around three feet by 2100. If that happens, water would inundate about 8.1% of the Emirate of Ajman, 1.2% of the Emirate of Sharjah, and 5.9% of the Emirate of Umm Al-Quwain. Many UAE residents live in these coastal areas.

A new type of floating home could withstand future rising sea levels. Waterstudio, a Dutch architecture firm that exclusively designs floating structures, is creating 33 private villas on artificial islands off the coast of Dubai. Developer Dutch Docklands will build the first one this month.

The buoyed islands will bob up and down with water levels so they won't flood, Waterstudio founder Koen Olthuis told Business Insider.

This year, Dubai is getting its first of 33 floating villas by Waterstudio, which collaborated with French oceanographer Jean-Michel Cousteau.

There's no set timeline on when the entire neighborhood, dubbed Amillarah, will be complete.



The islands will also include outdoor patios with trees and a pool.



The homes will not exactly be affordable. Each island will cost between $23 million and $27.5 million.

They went on sale in 2015.

Amidst allegations of abuse and decades of denials, Allen still continues to work in film, tapping big names for starring roles in his movies and still garnering support for fans and audiences. As men like Harvey Weinstein continue to face accountability and justice (or what Allen has called a "witch hunt"), where does Woody Allen fall in Hollywood's historic reckoning?

Many actors and actresses have been accused of not only remaining complacent, but actively encouraging Allen's behavior with their continued participation in his productions.

These celebrities have taken on roles in different Woody Allen movies and this is what they've had to say about it.

Selena Gomez

Selena Gomez faced tough criticism after signing on to star in a new Woody Allen film in 2017 reportedly about "a middle-aged man who is sleeping with a much younger woman, among other actresses."

Gomez responded to the backlash and explained her thought process to Billboard, who named her its "Woman of the Year."

"To be honest, I'm not sure how to answer — not because I'm trying to back away from it," Gomez said. "[The Harvey Weinstein allegations] actually happened right after I had started [on the movie]. They popped up in the midst of it. And that's something, yes, I had to face and discuss. I stepped back and thought, 'Wow, the universe works in interesting ways.'"

She also followed up by mentioning her solidarity with women who'd experienced sexual assault or harassment.

"I feel all those things. I've cried," Gomez said. "But I definitely feel hopeful. As people speak out, I hope that feels powerful to them, because they deserve to feel that. I'm fortunate enough not to have experienced some of the traumatic things that other women have had to go through. I've known people in my family who've gone through those things. I try to let people come to me and open up, to make a safe environment for them to do so."



Justin Timberlake

Singer and actor Justin Timberlake took on a role in Allen's 2017 film "Wonder Wheel," starring alongside Kate Winslet. Social media users joined Dylan Farrow, Allen's adopted daughter whom he allegedly abused, in admonishing Timberlake for what they called hypocrisy as he supported the Time's Up initiative while also working with an alleged predator.

For his part, Timberlake has remained mostly quiet in his responses, but did follow up questions about Allen with his take on the Weinstein scandal during an interview with Inquirer.net.

"I'm an only child raised by his mother. So, I am extremely sensitive to women because I love my mom so much," Timberlake said while promoting "Wonder Wheel.""Everything you've heard about in the last few weeks, it's sad. I hope that it gives a lot of women the courage to step up … I don't feel that I've ever had anyone of the opposite sex or the same sex try to take advantage of me. But, I know how I would feel. I think about my mother and my wife, and if I were to have a daughter one day, how I would feel about that."

He continued by saying, "This is a serious matter and I don't want to make a joke of it. I hope that it does inspire a lot of people, any minority who's been preyed upon in this way to speak up and feel confident that they can speak up."



Elle Fanning

19-year-old Elle Fanning will star with Selena Gomez in the aforementioned upcoming Woody Allen film, which a report said will feature a sexual relationship between an older man and a 21-year-old girl.

Fanning did not confront the Woody Allen controversy but did say that she was "nervous" to get started with the film.

"For [Woody Allen] films, it's such a whole new experience," Fanning told Vanity Fair. "His crew picks up the cast in these giant vans that come up to your apartment in New York. Sometimes you're the only person getting in the van. The first time Timothée was in the van, we spent the first 25 minutes talking to each other."

Though the Gaineses may soon be disappearing from television screens across America, their hometown ambassadorship is strengthening nationwide.

Waco, Texas, a city with a population of about 134,400, was recently named the No. 2 trending travel destination in the US by TripAdvisor, seemingly thanks to the Gaineses' burgeoning local empire.

In 2017, their expansive downtown Waco hub, Magnolia Market at the Silos, averaged 30,000 visitors a week — an annual total close to 1.6 million people, reports the Waco Tribune. That's more than the Alamo, one of Texas' best-known tourist attractions.

Meanwhile, hotel occupancy rates in Waco were 75% in the second quarter of 2017, according to the Waco Tribune, the second-highest in the state.

The Gaineses employ more than 600 people in Waco to help run their laundry list of businesses, including a 2.5 acre home-improvement hub, a real estate and construction company, two rental properties, and an upcoming restaurant, Magnolia Table.

The Trump administration has relaxed school lunch nutrition rules — here's what kids can now eat

More sugary chocolate milk, fewer whole grains, and around 300 extra milligrams of salt — these are just some of the ways the Trump Administration has relaxed school-lunch nutrition rules put in place during the Obama Administration. 

Agriculture Secretary Sonny Perdue, who heads the US Department of Agriculture (the agency that sets school meal rules), has argued that the healthier meals fed to kids since 2012 have led some picky eaters to refuse more of the food offered at school. 

"It doesn’t do any good to serve nutritious meals if they wind up in the trash can," Perdue said in a statement posted on the USDA website in November. 

But recent studies suggest that's not true, and that kids are now eating more vegetables and taking in less saturated fat at school (though the healthier lunches did take some getting used to).

It costs more to feed kids healthier meals, however. And with the administration set on major budget cuts — including spending less on programs that feed children, and slashing billions from their 2018 education budget — the cost-cutting effects of feeding children cheaper, processed foods may be a primary reason for the rollback. 

Here's what kids across the country can get in the school lunch line under the Trump administration's relaxed rules:

Since the 2014-2015 school year, cafeterias across the country were required to serve kids "whole grain rich" meals. But not anymore.

Under the Obama-era rules, all breads, cereals and pastas served to schoolchildren had to be at least 50% whole grain.

But the USDA now says that feedback from students and schools indicates they're having a hard time finding "the full range of products they need and that their students enjoy in whole grain-rich form." (The USDA did not respond to Business Insider's request for comment for this story.)

Whole grains are rich in fiber and protein, as well as B vitamins and minerals, which are good sustenance for your muscles, digestive system, tissues and bones. What's more, the United States Department of Agriculture's website explains that whole grains are important for helping young, growing minds "feel full longer so they stay alert to concentrate at school."

In contrast, refined grains, which have been stripped of their nutrient-rich outer shells, get processed more quickly in the body and turned into sugar, which can cause people to overeat and promote weight gain.

Long-term studies have shown that more refined carbohydrate consumption can also lead to diabetes and heart disease. Eating whole grains, on the other hand, can prevent these problems.  

 



Salt's back too.

The Obama Administration's nutrition rules were designed to essentially cut current salt levels in school lunches in half by 2022. 

Both low- and high-salt diets are associated with increased mortality. Recent studies suggest the ideal sodium consumption level for kids is around 3 to 4 grams of sodium per day. Current school lunches contain about 1.2-1.4 grams of salt, and the Trump administration is keeping that the same.

Nutrition experts say the target set in the Obama-era rules might have gone too far.

"The sodium requirement may have been too restrictive," Susan Gross, a child nutrition expert at Johns Hopkins, told Business Insider in an email. 



Kids are once more allowed to drink sugary flavored milk.

Under the Obama-era rules, added sugar and flavoring was only permitted in skim milks, but now chocolate 1% is allowed, too.

But any carton of flavored milk, regardless of its fat content, isn't a good choice for kids.

More than half of US children in school today are on track to be obese by age 35. Gross said that sugary drinks at school may be contributing to that epidemic. A single carton of flavored milk adds about four teaspoons of sugar to a child's daily diet.

Although his background in Democratic politics would suggest that he is an unlikely figure for such a position, just like Trump, Kushner comes from a wealthy and influential New York family that made its money in real estate. Despite his age, Kushner has made a name for himself in real-estate development, but has now found himself in the crosshairs of the Trump-Russia investigation.

I took my first ride in a self-driving car, thanks to Lyft — and it was actually pretty boring, but in a good way

LAS VEGAS — When I had the chance to hail a self-driving Lyft at the 2018 Consumer Electronics Show, I jumped at the opportunity. 

A car that drives on its own and will ferry me around the Las Vegas strip? "Sure," I thought.

It sounded a little scary but totally futuristic. Plus, I'd never ridden in a self-driving car before.

So on Wednesday morning, my colleague Kif Leswing and I showed up at a parking lot near the Las Vegas Convention Center to hail a self-driving Lyft ride. Lyft partnered with autonomous vehicle startup Aptiv for the event — Aptiv provided the car and the self-driving technology, while Lyft handled the ride-hailing part. 

We had a nice ride around Las Vegas, but it turned out to be one of the least thrilling things I've done at CES so far — but that's a good thing.

Autonomous car company Aptiv is one of seven companies Lyft partners with.

Jody Kelman, Lyft's product lead for its self driving platform, described their method as "plug and play": Companies like Aptiv, Waymo, and Jaguar Land Rover provide the cars, but they use Lyft's open platform for things like autonomous ride-sharing. 



The coolest thing about the cars is how subtly Aptiv added the sensors, called LIDAR.

They're built right into the car rather than sitting on the roof like a lot of other companies. Those arrows point to a few, but they were others all over the body of the car.



It's actually so hard to tell it's a self-driving car that it had to be stamped across the back bumper.

THEN AND NOW: The cast of 'Roseanne' 29 years later

We're not done seeing reboots of classic '90s television just yet. A nine-episode "Roseanne" revival is coming to ABC March 27 along with most of the original cast.

The comedy made its mark on TV history for highlighting blue-collar working families realistically through the Conner family's struggles with poverty, obesity, and employment. During the '90s, "Roseanne" was progressive for its brash and bold way of tackling current topics and sexuality.

When the show returns this spring, don't expect it to shy away from Trump, politics, and healthcare. 

Before the Conners return to our living rooms, take a look back at how the actors have changed since the show debuted in October 1988.

THEN: Roseanne Barr played the outspoken matriarch of the Conner family, also named Roseanne.

Roseanne has always been loud, proud, and not afraid to tell it how it is. During the original nine-season run, the show revolved around her relationship with her sister Jackie, the ups and downs of her marriage, and the couple's children.

Throughout the series, she struggled with obesity, poverty, and holding several different jobs as a waitress and fast-food employee before eventually co-owning a restaurant with her sister. 



NOW: One of the top moms of comedy TV looks amazing at 65.

Don't plan to see Roseanne with brown locks. New photos released for the nine-episode revival show her donning grey hair.

Barr is among the writers on the revival along with Whitney Cummings, Wanda Sykes, and Norm McDonald.



THEN: John Goodman was Roseanne's laid-back contractor husband, Dan Conner.

Dan eventually opened a motorcycle shop later on the show.

It will be interesting to see how Dan is re-written into the show. His character was killed off the series at the show's end after it was revealed he suffered a heart attack at Darlene and David's wedding.

6 things you should know before going abroad for the first time

When I was 18 I boarded a plane and headed abroad alone for the first time. I was moving to Florence, Italy for nine months with no idea what to expect just knowing I was far too excited to sleep.

Whether you move abroad for good or go for a week, it has the power to be a transformative experience, one that simply can’t be found anywhere else. When you’re embarking on this journey for the first time there are a few things to be aware of.

Try to be as open to what you experience as possible.

There’s a quote attributed to James A. Michener that reads, "If you reject the food, ignore the customs, fear the religion and avoid the people, you might better stay at home." Experience the place you’ve come to visit and don't just sit in your room watching TV.



Keep a record of your trip.

There are so many little moments in a trip that come together to make it special. To the best of your abilities try to keep a log of what you do each day. In the moment it may be hard to believe but your memories will fade quickly and blend together, keeping them sorted can ensure you’re able to treasure them forever.



Have a plan and then improvise.

My favorite trips always involve a deviation from what I had planned for the day. The best part of travelingis discovering the unexpected. Know what you want to do and then let the world choose your path there.

There's an enormous park right in the heart of Moscow — here's what it's like to visit

First opened in 1939 as an agricultural exhibition, Moscow’s Vystavka Dostinzheniy Narodnogo Khozyaystva — you can call it VDNH— has grown into something much more than that.

After several name changes and renovations, the park is now a major hub of the Russian capital, even boasting its own eponymous metro stop. With more than two million square meters of territory to explore, VDNH is stuffed with museums, shops, cultural displays, amusement park rides, a functioning farm, and the largest ice skating rink in Europe.

Bring comfortable walking shoes.

As the full name of the park translates to “Exhibition of Achievements of the National Economy of the USSR,” there are displays of Soviet might everywhere. Figuring prominently into the park’s geography are a number of ornate pavilions dedicated to former Soviet republics, each one containing displays (and gift shops) hawking that country’s wares.

VDNH simultaneously serves as a place to commemorate Soviet achievement as well as a place to enjoy a sunny Moscow afternoon. We visited in December, which is quite the frozen off-season, but there was still no shortage of things to see.

To get to VDNH, we had to first ride the metro to the stop of the same name.



Before even entering the park, the foreboding “Monument to the Conquerors of Space” loomed high over everything. Built in 1964, this 351-foot statue depicts a rocket in flight, a tip of the hat to Soviet aviation ingenuity. But there’s much more inside the park.



A short walk away from the metro, we found the main entrance to VDNH.

You’ll notice there’s a construction platform around the plaza for restoration work. More on that soon.

5 food safety mistakes you're probably making in your kitchen — and how to prevent them

  • Kitchen sponges are useful, but you must sanitize and replace them often.
  • Maintain separate cutting boards for meats/poultry and fruits/veggies to avoid cross-contamination.
  • Wash, rinse, and properly sanitize kitchen surfaces for optimum food safety.
  • Don’t ever wash your raw meat and poultry. Instead, cook it to US Department of Agriculture (USDA) recommended safe minimum internal temperatures to kill bacteria that cause foodborne illness.

You've most likely been washing your hands pretty regularly since you were a kid. Maybe you even splash on some hand sanitizer every time you even think about touching any shared surfaces.

But there's much more to food safety than just making sure you wash your hands before you handle your food.

According to a former kitchen professional certified in food safety and sanitation, here are a few mistakes you're probably making in your kitchen, and what you can do to prevent them.

Keeping your sponge by the kitchen sink for too long

A scientific study published in the July 2017 issue of scholarly journal "Scientific Reports" spawned a flurry of panicked articles that cast your kitchen sponge as the biggest, baddest foodborne illness villain in your home.

But that's not the whole story. In September 2017, NPR’s Michaeleen Doucleff — an experienced scientist and science journalist — spoke to Drexel University food microbiologist Jennifer Quinlan about whether washing your sponges does, in fact, kill enough harmful bacteria to be worthwhile.

The first rule of good sponge etiquette, according to Quinlan: Don't ever use your sponge to clean up meat juice of any kind.

"If you're dealing with raw juices from meat or poultry, you should be using paper that can be disposed of,"Quinlan told NPR.

Quinlan also advises against keeping any given sponge more than about two weeks. Frequent sponge replacement is the key to maintaining a healthy kitchen while still being able to clean every surface that your food touches.

According to the USDA, placing your sponge in your dishwasher with a heated dry cycle or putting a wet sponge in the microwave for a minute will significantly knock back (but not completely eradicate) the sponge's bacterial population.

If you don't mind doing a little extra laundry, you can also try keeping a rotating supply of fresh dishcloths in your kitchen. Simply use a new dishcloth every day and toss the old one in the laundry.



Not using good cutting board sanitation

There's no denying the visual and tactile appeal of a beautiful wood cutting board. Unfortunately, wood cutting boards of any type are all porous surfaces  — even bamboo, although it's less porous than other types.

That doesn't mean you shouldn't use them, but it does mean that they're more difficult to keep clean and sanitary. If you use them, you need to allow yourself enough time to take good care of them to keep you and anyone you feed healthy.

Marble, plastic, and glass are all types of nonporous cutting boards you might have in your kitchen. No matter what type of board you choose, the USDA recommends having one cutting board dedicated to raw meats and nothing else. Use a separate cutting board for fresh veggies and fruits, as well as bread products.

If you buy cutting boards in sets (like those flexible cutting mats that make meal prep a breeze), you might see them color-coded or even marked with meat, fish, veggies, and poultry to help you more easily avoid cross-contamination.

One more note: If you use the professional chef's trick of anchoring your cutting board with a damp towel to keep it from slipping on the counter, be sure to wash and sanitize that towel often. Some modern washing machines have a handy sanitize cycle that works well for towels.



Not knowing the difference between washing and sanitizing

Washing is done with hot soapy water, and is an essential step in keeping a healthy kitchen. But removing dirt, grime, and food debris from your dishes, pots, and pans is just the first step.

Next, you need to rinse your dishes thoroughly with running water to get rid of all traces of your dish soap (as well as all the grime you just scrubbed off). Besides the fact that soap tastes terrible — and can upset your stomach — it also interferes with sanitizing.

You don't need to sanitize every single dish, kitchen tool, or utensil you use. But sanitizing cutting boards and work surfaces after giving them a proper cleaning will up your kitchen food safety standards significantly.

A simple, inexpensive bottle of bleach diluted at a rate of 1 tablespoon per gallon of water is all you need; no special equipment necessary.
